Ingredients
  1. 4 bell peppers
  2. 1/2 lb ground chicken or turkey
  3. 1 c quinoa
  4. fresh parsley
  5. olive oil
  6. vegetable or chicken stock
Instructions
  1. Core peppers and stuff with cooked seasoned ground turkey or chicken, quinoa and parsley. coat peppers with olive oil. stand in roasting pan and add 1/4 inch stock. Roast for 30-40 minutes in 450 degree oven.
